Pasta alla vodka
This is a twist on a classic pasta with tomato sauce that is altogether special enough to serve when you have people over. It has a background flavour that lifts it on to another level. Use good vodka like Ruby Blue’s creamy Potato Vodka available in SuperValu and lots of other outlets. It is made in Lisburn and tastes superb with white lemonade, a slice of green apple and a sprig of thyme. Check out their liqueurs too. They love prosecco! www.rubybluespirits.com
Ingredients
250g dry weight of pasta. I like penne.
1 tin of chopped tomatoes in juice
1 clove of garlic crushed
1 tablespoon rapeseed or olive oil
1 tbsp tomato puree
1 pinch of chilli flakes or a quarter red chilli finely chopped
A small carton of double cream
A jigger of vodka…ie a pub measure.
Boil the pasta according to the pack instructions and reserve a little of the cooking liquid to loosen the sauce.
Meanwhile, fry the garlic in the oil for a minute before adding the tomatoes, puree, chilli and vodka. Let it cook for five minutes before stirring in the cream. Season the sauce and toss through the pasta. Super with a salad on the side and crusty bread.
